Bacon-Cheddar Scone
What could go wrong with bacon?
Bacon-cheddar scone is flavorful savory scone perfect for breakfast and brunch, or even for afternoon snack. Cheddar cheese and oniony chive will add enough sharpness to the heavy bacon flavor resulting a well-balanced flavorful buttery scone.
Bacon-Cheddar Scone
(Yield: about 16 small scones / Cooking time: 30-35 minutes)
Ingredients:
+ 2 cups unbleached all-purpose flour
+ 5 Tbsps cold unsalted butter, diced in small pieces
+ 1 Tbsp baking powder
+ 2 tsps sugar
+ 150g bacon
+ 1 cup coarsely grated cheddar cheese
+ 1 cup fresh chives, cut into 0.5"
+ 3/4 cup milk
Procedures:
1. First, we need to cook bacon. Slice bacon into thin strips and add to a cold pan. Cook the bacon over low heat to render the fat. You don't even need to stir the bacon. Just let the bacon render the fat and crisp up. When the bacon become crispy, drain the fat over paper towel and cool to room temperature.
2. Preheat your oven to 425°F (218°C).
3. Mix butter and flour with a spoon. The mixture should have cornmeal texture. It is okay to have some small chunks of butter. Add baking powder and sugar, and mix well.
4. Add cheddar cheese, chives and crispy bacon to the flour mixture. After mixing them well, add milk, stirring with a spoon. The dough should come together.
5. Pat the dough into a square shape about 3/4" thick. You can easily shape the sticky dough by wrapping it with plastic wrap.
6. Cut out the dough into 16 pieces.
7. Place the dough in a baking sheet lined with parchment paper or silicone mat. Please make sure that dough pieces are at least 1" apart from each other.
8. Bake in the preheated oven (@425°F or 218°C) for 20-22 minutes until the outside becomes golden.
